ABOUT US
Our company, emblematic of a short food-supply chain, was founded at the end of the 1800s in the province of Perugia, in an area that has always been know for its olive cultivation.
In the hills surrounding our mill, we cultivate around 2,500 olive trees, mainly the Frantoio, Leccino, Moraiolo and Dolce Agogia varieties, respecting organic agriculture regulations.
A century of love and passion for extra virgin olive oil
The mill recounts the story of our country′s agricultural and economic development. Within its walls, newer methods and machines eventually superseded obsolete ones as shown here in chronological order:
  • The millstone pulled by the donkey with the rod press and the worm screw (1870)
  • Mechanical traction presses and column presses (from 1935)
  • The cage presses(1943)
  • The superpresses, the first kneading machines and the centrifugal separator (1960)
  • The double percolation extraction method (1997)
  • The current computerized system with touch screen and electronic temperature control for the best ever cold-method extraction (2011)
PROCESSING

After 10 months of work in the olive grove, we begin harvesting in October with the technological help of electric or pneumatic olive harvesters and shakers. The olives are sent for milling the very same day. The immediacy of processing, combined with cold processing, allow us to obtain an extra virgin olive oil of the highest quality.
EXTRA VIRGIN OLIVE OIL
The extra virgin olive oil we produce is a balanced oil with the scent of green olives and freshly cut grass.
The taste evokes, for the most part, hints of artichoke or almond. It is spicy and slightly bitter, characterized by very low acidity and a high number of antioxidant polyphenols.
CONDIMENTS
Our condiments are made by grinding the olives together with citrus fruits, various spices and other fresh vegetable foods. The final result is a product much appreciated by consumers that has all the properties of extra virgin olive oil and those of the vitamin C contained in lemons and oranges or those of turmeric, ginger and chilli peppers.
